These sweet muffins are an excellent breakfast treat!

Ingredients

  • 1/2 cup butter, softened
  • 1-1/2 cups sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon rind, finely grated
  • 1 cup buttermilk
  • 1 cup strawberries, sliced

Directions

  1. Cream butter, sugar and eggs.
  2. Stir in vanilla; mix well.
  3. Combine flour, baking soda, baking powder and salt.
  4. Blend flour combination into egg mixture.
  5. Fold in lemon rind and buttermilk; do not overmix.
  6. Pour batter into greased muffin tins.
  7. Place sliced strawberries onto the top of each muffin.
  8. Sprinkle granulated sugar over top of each strawberry slice.
  9. Bake at 350 degrees for 18-20 minutes.
