Want comfort food in the summer?  Stove Top Rice Pudding is perfect because it won't heat up the kitchen.

Ingredients

  • 1 cup water
  • 1/2 cup long grain rice
  • 4 cups milk
  • 1/2 stick butter
  • 2 eggs, beaten
  • 1/2 cup sugar
  • 1/2 cup raisins (optional)
  • 1/2 teaspoon vanilla

Directions

  1. Cook rice in water for about 7 minutes or until water begins to evaporate.
  2. Add milk, butter, sugar and raisins. Bring to a boil. Then reduce to simmer and cook 1 hour and 15 minutes.
  3. Add vanilla and beaten eggs. Stir quickly to incorporate eggs. Let cool.
