Steamed Summer Vegetables are tossed in lemon herb butter.

Ingredients

  • 1/2 teaspoon salt
  • 3 medium potatoes, pared and sliced
  • 1/2 pound fresh green beans, cut in 1 inch pieces
  • 1 large onion, sliced
  • 2 zucchini, sliced
  • 2 cups yellow squash, sliced
  • Lemon Herb Butter: 1/3 cup butter
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • dash of pepper

Directions

  1. Bring 1 1/2 cups water and salt to a boil in large skillet; reduce heat. Place steamer in skillet. Layer potatoes and green beans in steamer. Simmer covered, for 5 minutes. Add remaining vegetables.
  2. Simmer for 5 minutes or until tender-crisp.
  3. Prepare Lemon Herb Butter: Melt butter in small saucepan. Stir in lemon juice, salt and pepper. Toss with steamed vegetables.
