- 6 medium carrots, peeled
- 1 tablespoon harissa paste
- Finely chopped fresh mint or parsley to garnish
- Cut the carrots into thick matchsticks and then place in a steamer basket over a saucepan of boiling water. Steam the carrots for 3 minutes and then transfer to a bowl.
- Immediately add the harissa to the carrots, toss to coat and then top with the fresh mint or parsley. Serve warm.
