This staple Asian sauce works on everything from gyoza, to dim sum to steamed fish.


  • 1 part light soy sauce
  • 1 part apple vinegar
  • splash of sesame oil
  • drizzle of chilli oil
  • chopped spring onions to garnish
  • minced ginger to taste


  1. Place the soy sauce, apple vinegar, sesame oil and chili oil into a small bowl and whisk until thoroughly blended.
  2. Top the sauce with some chopped spring onions and some minced ginger and serve.
