Southern style squash and cheese vegetable dish.

Ingredients

  • 1 pound yellow squash
  • 2 cup water
  • 1 small onion
  • 1 cup cheese, grated
  • 1 tablespoon butter
  • 1/2 cup bread crumbs
  • 1 cup milk
  • 2 eggs, separated
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  1. Slice the squash and chop the onion. Cook in the 2 cups of water until tender. Drain.
  2. Combine with the butter and mash. Mix in the cheese, milk, bread crumbs, egg yolks, salt and pepper. Cool.
  3. Stiffly beat the egg whites, fold in to the cooled squash mixture.
  4. Pour into a greased baking dish and bake at 350 degrees Fahrenheit until lightly browned.
