Southern style squash and cheese vegetable dish.
Ingredients
- 1 pound yellow squash
- 2 cup water
- 1 small onion
- 1 cup cheese, grated
- 1 tablespoon butter
- 1/2 cup bread crumbs
- 1 cup milk
- 2 eggs, separated
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Directions
- Slice the squash and chop the onion. Cook in the 2 cups of water until tender. Drain.
- Combine with the butter and mash. Mix in the cheese, milk, bread crumbs, egg yolks, salt and pepper. Cool.
- Stiffly beat the egg whites, fold in to the cooled squash mixture.
- Pour into a greased baking dish and bake at 350 degrees Fahrenheit until lightly browned.
