A great way to sneak in some extra veggies into your kids’ sandwiches; this mayonnaise is also superb spread over grilled fish.
Ingredients
- 1/4 cup mayonnaise
- 1 cup baby spinach
- 1 teaspoon minced garlic
- Lemon juice to taste
- Sea salt
Directions
- Place the mayonnaise, 1 cup of spinach, garlic, lemon juice, 1/4 teaspoon salt and 1/4 teaspoon pepper into a food processor and blend until smooth and creamy.
- Check the seasoning and add accordingly.
