Spinach Feta Tart is quichelike and filled with ricotta and spinach.

Ingredients

  • 1, 9 inch pie shell, baked
  • 2 eggs
  • 1 cup fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup feta, crumbled
  • 1/4 cup milk
  • 2 teaspoons fresh oregano
  • 2 tablespoons Parmesan cheese, grated
  • red and yellow peppers, thinly sliced for garnish

Directions

  1. In a medium bowl, beat eggs slightly. Stir in spinach, ricotta, the 1/2 cup feta, milk and oregano. Sprinkle pastry with Parmesan cheese; top with egg mixture.
  2. Bake at 325 degrees F for 20 minutes or until a knife inserted in center comes out clean. Let tart stand for 5 minutes before cutting. Add sliced pepper for garnish, if desired.
