Spinach Feta Tart is quichelike and filled with ricotta and spinach.
Ingredients
- 1, 9 inch pie shell, baked
- 2 eggs
- 1 cup fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup feta, crumbled
- 1/4 cup milk
- 2 teaspoons fresh oregano
- 2 tablespoons Parmesan cheese, grated
- red and yellow peppers, thinly sliced for garnish
Directions
- In a medium bowl, beat eggs slightly. Stir in spinach, ricotta, the 1/2 cup feta, milk and oregano. Sprinkle pastry with Parmesan cheese; top with egg mixture.
- Bake at 325 degrees F for 20 minutes or until a knife inserted in center comes out clean. Let tart stand for 5 minutes before cutting. Add sliced pepper for garnish, if desired.
