Serve Spinach Casserole with a tossed green salad and hot bread for a light dinner.

Ingredients

  • 6 eggs, beaten
  • 6 tablespoons flour
  • 10 ounces Cheddar cheese, shredded
  • 24 ounces cottage cheese
  • 1 stick margarine, melted
  • 1 package frozen spinach, chopped

Directions

  1. Thaw and squeeze spinach dry. Mix all ingredients and pour into a 3 quart casserole. Bake at 350 degrees F for 1 hour.
