Serve Spinach Casserole with a tossed green salad and hot bread for a light dinner.
- 6 eggs, beaten
- 6 tablespoons flour
- 10 ounces Cheddar cheese, shredded
- 24 ounces cottage cheese
- 1 stick margarine, melted
- 1 package frozen spinach, chopped
- Thaw and squeeze spinach dry. Mix all ingredients and pour into a 3 quart casserole. Bake at 350 degrees F for 1 hour.
