This easy-to-make salad serves well at family picnics or backyard barbecues.
Ingredients
- 1 tablespoon honey
- 1 tablespoon vinegar
- 1 tablespoon water
- 1-1/2 teaspoons olive oil
- 1/2 teaspoon lemon juice
- 1/8 teaspoon dried tarragon
- 1/4 teaspoon salt
- 4 cups torn spinach
- 4 cups torn romaine lettuce
- 2 cups watermelon, chopped into bite size pieces
- 1 cup strawberries, sliced
- 1/2 cup cucumber, sliced
- 1/4 cup onion, diced
Directions
- Mix together honey, vinegar, water, olive oil, lemon juice, tarragon and salt.
- In a large bowl, toss spinach, romaine lettuce, watermelon, strawberries, cucumber and onion. Pour dressing over salad and blend until thoroughly coated.
- Keep refrigerated until ready to serve.
