Shredded chicken breast low fat spinach salad.
- 2 (10 ounce) packages frozen chopped spinach, thawed
- 1 pound boneless, skinless chicken breasts, cooked
- 2 tablespoons lemon pepper
- 1 cup fat-free mayonnaise
- Pat the spinach dry. Pour into a large bowl. Shred the chicken and toss with the spinach. Pour the lemon pepper and mayonnaise over and toss again.
