Ingredients

  • 1 egg, beaten
  • 2 tablespoons flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon allspice
  • 1 pound sweet potatoes
  • 3 onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 jalapeno pepper, seeded and chopped
  • zest of 1 lime, grated
  • 1 teaspoon brown sugar
  • peanut oil for frying

Directions

  1. Mix together egg, flour, baking powder, salt, cayenne and allspice in a large bowl. Set aside.
  2. Grate sweet potato. Scoop up handfuls and squeeze dry. Stir into egg mixture. Mix in onion, garlic, ginger, jalapeno, lime and sugar.
  3. Pour oil into a heavy skillet to a depth of 1/4 inch. Heat to 350 degrees. Drop in small mounds of potato mixture, a few at a time; flatten to form into small disks. Fry until brown, 3 minutes per side or until cooked thoroughly. Drain on paper towels.
