Spiced Carrot Slices are infused with mustard, ginger and cinnamon.

Ingredients

  • I, 16 ounce bag carrots, peeled and thinly sliced
  • 3 tablespoons water
  • 2 tablespoons olive oil
  • 4 teaspoons brown sugar
  • 1 teaspoon salt
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon ground ginger

Directions

  1. In 12 inch skillet over medium heat, in 1 inch boiling water, heat carrots to boiling. Reduce heat to low; cover and simmer 5 to 10 minutes until crisp-tender. Drain.
  2. In medium bowl, combine carrots with the remaining ingredients. Cover and refrigerate for at least 1 hour to blend flavors, stirring occasionally.
