A quick and easy beef and vegetable soup.
- 1 pound lean ground beef, browned and drained
- 2 (15 ounce) cans stewed tomatoes
- 3 (14 once) cans beef broth
- 1 (16 ounce) package frozen mixed vegetables
- 1/2 cup instant brown rice
- Add everything but the rice to a large pot. Bring to a boil, then reduce to a simmer for 20 minutes. Stir in the rice and increase heat to medium for 5 minutes.
