A quick and easy beef and vegetable soup.

Ingredients

  • 1 pound lean ground beef, browned and drained
  • 2 (15 ounce) cans stewed tomatoes
  • 3 (14 once) cans beef broth
  • 1 (16 ounce) package frozen mixed vegetables
  • 1/2 cup instant brown rice

Directions

  1. Add everything but the rice to a large pot. Bring to a boil, then reduce to a simmer for 20 minutes. Stir in the rice and increase heat to medium for 5 minutes.
