Spanish Tuna and Olives is a nice recipe for two.

Ingredients

  • 1 can tuna, drained
  • 1 can green olives, chopped
  • 3/4 teaspoon flour
  • 1/2 cup white wine
  • 2 teaspoon lemon juice
  • pepper to taste
  • 1/2 teaspoon grated lemon rind
  • 1 tablespoon parsley, chopped
  • 1 tablespoon butter

Directions

  1. Melt butter in saucepan. Blend in flour. Add wine, lemon juice and pepper. Cook, stirring constantly, until thick and smooth. Add tuna, lemon rind and olives. Heat thoroughly. Garnish with parsley.
