- 1 package Spanish-flavored rice mix
- 1 pound ground beef
- 1-1/2 cups water
- 1 tablespoon olive oil
- 1 cup salsa
- 1 cup corn
- 1 cup shredded cheddar cheese
- Place the ground beef in a large skillet over medium heat and cook until browned. Remove and discard any fat from the meat and then stir in the rice and olive oil and bring the mixture to a boil. Once boiling, cover the pan and cook over medium-low heat for 18 minutes.
- Add the salsa and the corn to the pan, stir to combine and then simmer for 4 minutes. Serve immediately topped with the cheddar cheese.
