This Spanish marinade, created with a blend of paprika, saffron and spices, will give your pork loin an enjoyable rustic flavor.
Ingredients
- 8 garlic cloves
- 1 teaspoon oregano
- 1 sprig rosemary
- 12 black peppercorns
- 1 teaspoon sweet smoked paprika
- 3 strands saffron
- 8 tablespoons cider vinegar
- 1 teaspoon salt
- Olive oil
Directions
- Place the garlic, oregano, rosemary, peppercorns, paprika, salt and saffron into a mortar and pestle, add a splash of olive oil and then mash the mixture into a paste.
- Stir the vinegar into the mixture, and then mix well to combine. Rub the pork with the marinade, cover and marinate for at least 4 hours.
