A classic side dish, Southern Okra is full of flavor.
Ingredients
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 2 cups fresh okra, sliced
- 2 tablespoons vegetable oil
- 3 medium tomatoes, peeled and chopped
- 1 medium green pepper, chopped
- 1 teaspoon flour
- 1/2 teaspoon pepper
- 1 medium onion, chopped
Directions
- Combine sugar, flour, salt and pepper and set aside. In a covered saucepan, cook okra in boiling water for 10 minutes, until tender. Drain okra and set aside.
- In a skillet, heat oil over medium heat and saute onions and pepper until tender. Stir in sugar mixture and tomatoes. Cook 5 minutes. Add okra and simmer until heated through. Stir as little as possible.
