Southern Okra

A classic side dish, Southern Okra is full of flavor.


  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 2 cups fresh okra, sliced
  • 2 tablespoons vegetable oil
  • 3 medium tomatoes, peeled and chopped
  • 1 medium green pepper, chopped
  • 1 teaspoon flour
  • 1/2 teaspoon pepper
  • 1 medium onion, chopped


  1. Combine sugar, flour, salt and pepper and set aside. In a covered saucepan, cook okra in boiling water for 10 minutes, until tender. Drain okra and set aside.
  2. In a skillet, heat oil over medium heat and saute onions and pepper until tender. Stir in sugar mixture and tomatoes. Cook 5 minutes. Add okra and simmer until heated through. Stir as little as possible.
