Southern Collard Greens

A slightly bitter vegetable dish that makes a great side for any meal.


  • 2 lbs chopped collard greens, stems discarded
  • 3 tbsp chopped onion
  • 1 large garlic clove, minced
  • 2 tbsp olive oil
  • 2 tsp bacon fat
  • 2 tbsp dark sesame oil
  • 1/4 tsp salt
  • 1/2 tsp sugar
  • Pinch of chili pepper flakes


  1. In a large skillet with a tight fitting cover, heat bacon fat and olive oil over medium heat until bacon fat melts.
  2. Add in onions and sauté for a couple of minutes until transparent. Add garlic and sauté until fragrant, about 20 seconds.
  3. Mix in the greens, sesame oil, chili pepper flakes, sugar and salt. Cover and cook until tender for about 8-10 minutes.
