Corn bread is a tasty and more rustic alternative to serving classic bread rolls at the dinner table. Enjoy it as is or lightly toasted under the broiler with butter until golden brown.
Ingredients
- 1-1/2 cups stone-ground cornmeal
- 1/2 cup all-purpose flour
- 1/4 cup shortening
- 1-1/2 cups buttermilk
- 2 teaspoons baking powder
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 3 egg whites
- 1 can (4 ounces) chopped green chiles, well drained
- 1/2 teaspoon chile powder
Directions
- Preheat your oven to 450 degrees and grease a square 8x8x2-inch pan with cooking spray.
- Place all of the ingredients into a bowl and beat well for 1 minute, the transfer the batter to the prepared pan.
- Bake the cornbread in the oven for 22-24 minutes or until the top turns light brown. Enjoy warm.
