Sour Cream Raisin Bars are three layers of sweet goodness.
Ingredients
- 2 cups raisins, cooked in 1/2 cup water for 10 minutes
- 1 cup brown sugar
- 1 cup butter
- 1 1/2 cups oatmeal
- 1 teaspoon baking soda
- 1 3/4 cups flour
- Filling: 3 egg yolks
- 1 1/2 cups sour cream
- 1 cup sugar
- 2 1/2 tablespoons cornstarch
- 1 teaspoon vanilla
- 1/2 cup walnuts or pecans, chopped
Directions
- Drain and cool raisins. Set aside. Mix brown sugar, butter, oatmeal, soda and flour. Place half of this mixture in greased 9 by 13 inch baking pan.
- Beat together filling ingredients. Add raisins and boil until thick, stirring constantly. Pour over crust. Sprinkle with remaining crumb mixture. Sprinkle nuts on top.
- Bake at 350 degrees F for 30 minutes.
