Two great seafood flavors combine in Sole with Oyster Sauce.
Ingredients
- 1 pound sole fillets
- 1/4 teaspoon pepper
- 3/4 cup white wine
- 4 tablespoons butter
- 2 cups mushrooms, sliced
- 1/2 cup whipping cream
- 1, 8 ounce can oysters, drained
Directions
- Preheat oven to 350 degrees F. Arrange fish in a single layer in shallow pan; sprinkle with pepper. Pour wine over fish and bake 10 minutes or just until fish flakes easily when tested with a fork. With large spatula, transfer fish to platter and keep warm; reserve pan liquid.
- Meanwhile in medium skillet over medium-high heat, in 2 tablespoons butter, cook mushrooms until golden, stirring occasionally. Arrange mushrooms over fish. Pour reserved liquid and cream into skillet and cook over high heat, gradually stirring in 2 tablespoons butter. Cook about 5 minutes until sauce is reduced to half, stirring occasionally. Add oysters and heat through. Pour sauce over fish.
