Quick cheesecake, perfect topped with fresh or canned fruit.
- 1 box unflavored gelatin
- 1/2 cup sugar
- 1 cup boiling water
- 2 (8-ounce) packages cream cheese, softened
- 1 teaspoon vanilla
- 1 (9-inch) graham cracker piecrust
- Dissolve the gelatin and sugar in the boiling water. Use a mixer to beat in the cream cheese and vanilla until smooth.
- Pour into the crust and refrigerate until firm.
