Quick cheesecake, perfect topped with fresh or canned fruit.

Ingredients

  • 1 box unflavored gelatin
  • 1/2 cup sugar
  • 1 cup boiling water
  • 2 (8-ounce) packages cream cheese, softened
  • 1 teaspoon vanilla
  • 1 (9-inch) graham cracker piecrust

Directions

  1. Dissolve the gelatin and sugar in the boiling water. Use a mixer to beat in the cream cheese and vanilla until smooth.
  2. Pour into the crust and refrigerate until firm.
