Tired of beef and chicken? Give duck a try with this hearty gumbo made with oysters and a variety of spices.
Ingredients
- 6 tablespoons of flour
- 9 tablespoons of butter
- 2 smoked duck meat, diced
- 1 onion, chopped
- 1 green pepper, chopped
- 2 bay leaves
- 24 oysters
- salt and pepper
- 1-1/2 teaspoon of thyme
- 1-3/4 quarts water
- 1 teaspoon of red pepper flakes
- 6 sprigs of chopped parsley
Directions
- In a Dutch oven, melt the butter and sprinkle in the flour. Mix with a wire whisk and heat until the mixture is extremely dark brown.
- Mix in the onions, green pepper and parsley and sauté for about 6 minutes until the onions are soft and clear.
- Slowly whisk in the water and then add the duck, bay leaves, oyster, thyme, red pepper and salt and pepper. Mix to combine and simmer for about 5-6 hours. Serve with white rice.
