Smoked Duck Gumbo

Tired of beef and chicken? Give duck a try with this hearty gumbo made with oysters and a variety of spices.


  • 6 tablespoons of flour
  • 9 tablespoons of butter
  • 2 smoked duck meat, diced
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 bay leaves
  • 24 oysters
  • salt and pepper
  • 1-1/2 teaspoon of thyme
  • 1-3/4 quarts water
  • 1 teaspoon of red pepper flakes
  • 6 sprigs of chopped parsley


  1. In a Dutch oven, melt the butter and sprinkle in the flour. Mix with a wire whisk and heat until the mixture is extremely dark brown.
  2. Mix in the onions, green pepper and parsley and sauté for about 6 minutes until the onions are soft and clear.
  3. Slowly whisk in the water and then add the duck, bay leaves, oyster, thyme, red pepper and salt and pepper. Mix to combine and simmer for about 5-6 hours. Serve with white rice.
