Ingredients

  • 1 pound crab meat
  • 2 cups chopped carrots
  • 1 cup celery chopped
  • 3 tablespoons garlic
  • 8 tablespoons butter
  • 1 cup flour
  • 4 cups vegetable stock
  • 4 cups heavy cream
  • 4 cups smoked cheddar
  • 2 tablespoons Old Bay
  • salt to taste

Directions

  1. Melt butter and sweat carrots, onions and garlic
  2. Add flour and Old Bay and stir until incorporated
  3. Add vegetable stock, heavy cream and cheese
  4. Cook until soup begins to thicken
  5. Gently fold in crab meat
