Ingredients
- 1 pound crab meat
- 2 cups chopped carrots
- 1 cup celery chopped
- 3 tablespoons garlic
- 8 tablespoons butter
- 1 cup flour
- 4 cups vegetable stock
- 4 cups heavy cream
- 4 cups smoked cheddar
- 2 tablespoons Old Bay
- salt to taste
Directions
- Melt butter and sweat carrots, onions and garlic
- Add flour and Old Bay and stir until incorporated
- Add vegetable stock, heavy cream and cheese
- Cook until soup begins to thicken
- Gently fold in crab meat
