Skillet Squash

Sweet pineapple and brown sugar topped acorn squash side dish.


  • 1 medium acorn squash
  • 1/3 cup pineapple juice
  • 1 tablespoon light brown sugar
  • 1/4 teaspoon cinnamon


  1. Chop the squash crosswise into 1/2-inch slices. Remove the seeds. Place in a large skillet.
  2. Mix together the remaining ingredients and pour over the squash. Bring to a boil. Reduce the heat to a simmer, cover and cook for 25 minutes, or until tender.
  3. Arrange the squash on a serving plate and pour the sauce over.
