Skillet Potatoes are studded with green peppers and onions.
- 3 tablespoon butter
- 4 medium potatoes, unpeeled and cut into 1/2 inch slices
- 1 small onion, chopped
- 1 small green pepper, chopped
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- Melt butter in 12 inch skillet over medium heat. Add potatoes; sprinkle with onion, green pepper, salt and pepper. Cover skillet and cook potato slices until tender and well browned on both sides, turning occasionally, about 15 to 20 minutes.
