Skillet Fried Corn Cakes

Sweet corn cake side dish.


  • 1/2 cup yellow cornmeal
  • 1 cup boiling water
  • 2 tablespoons apple juice
  • 1 cup whole kernel corn
  • 2 egg whites


  1. Mix together the cornmeal, water and apple juice. Stir in the corn.
  2. Beat the egg whites until stiff and fold into the mixture.
  3. Grease a skillet. Use a tablespoon to drop the mixture into the hot skillet. Brown on both sides.
