Sweet corn cake side dish.
Ingredients
- 1/2 cup yellow cornmeal
- 1 cup boiling water
- 2 tablespoons apple juice
- 1 cup whole kernel corn
- 2 egg whites
Directions
- Mix together the cornmeal, water and apple juice. Stir in the corn.
- Beat the egg whites until stiff and fold into the mixture.
- Grease a skillet. Use a tablespoon to drop the mixture into the hot skillet. Brown on both sides.
