Use this recipe for a Simple Syrup Bar Blend instead of a typical sweet and sour mix for cocktails. The addition of egg whites will give it an attractive frothy quality.
- 1 part sugar syrup
- 1 part fresh lemon juice
- 2 egg whites for each liter of blend
- Place the sugar syrup, lemon juice and egg whites into a container, cap tightly and then shake for 1 minute to emulsify the egg. Use the blend immediately after making.
