Shrimp with Mexican Tomato Sauce

Enjoy sautéed pieces of shrimp in a spicy Mexican tomato sauce. Serve with a side of warm tortillas.


  • 2 tablespoons olive oil
  • 1 cup finely chopped white onion
  • 2 teaspoons minced garlic
  • 2 jalapeño or serrano chiles, finely chopped, including seeds
  • 2 cups fresh or canned chopped tomatoes, including juice
  • 2 bay leaves
  • 1/2 teaspoon fine salt or 1 teaspoon coarse salt
  • 2 tablespoons olive oil
  • 1-1/4 pounds large shrimp, peeled and deveined
  • 1-1/2 teaspoons coarse salt
  • 1/4 cup chopped cilantro


  1. Place 2 tablespoons of olive oil into a large sauce pan and place over medium heat. Add the onion, garlic and chile and cook, stirring frequently, for 5 minutes.
  2. Stir in the tomatoes, bay leaves and the salt and cook for 20 minutes, stirring occasionally.
  3. Add 2 tablespoons of olive oil into a large sauté pan and place over medium-high heat. Once the oil begins to shimmer, add the shrimp and sauté for 3 minutes, string frequently.
  4. Transfer the shrimp to the tomato sauce and cook the mixture for 2 minutes, before stirring in the cilantro. Serve warm.
