Shrimp Scampi

Try Shrimp Scampi served over a bed of steamy rice pilaf.


  • 12 jumbo shrimp, peeled and deveined
  • 1/4 cup white wine
  • 1 tablespoon garlic, chopped
  • 1/2 cup chicken stock
  • juice of 1/2 lemon
  • 1 tablespoon shallots, chopped fine
  • pinch of oregano
  • 2 tablespoon butter
  • flour for dusting shrimp
  • chopped parsley for garnish.


  1. Heat saute pan and melt butter. Dust shrimp in flour. Add shrimp, garlic and shallots to hot pan; toss frequently. Deglaze the pan with white wine; then add chicken stock, lemon juice and pinch of oregano.
  2. Let cook 6-8 minutes, letting the sauce thicken and shrimp cook. Serve over rice pilaf. Sprinkle with parsley.
