Try Shrimp Scampi served over a bed of steamy rice pilaf.
Ingredients
- 12 jumbo shrimp, peeled and deveined
- 1/4 cup white wine
- 1 tablespoon garlic, chopped
- 1/2 cup chicken stock
- juice of 1/2 lemon
- 1 tablespoon shallots, chopped fine
- pinch of oregano
- 2 tablespoon butter
- flour for dusting shrimp
- chopped parsley for garnish.
Directions
- Heat saute pan and melt butter. Dust shrimp in flour. Add shrimp, garlic and shallots to hot pan; toss frequently. Deglaze the pan with white wine; then add chicken stock, lemon juice and pinch of oregano.
- Let cook 6-8 minutes, letting the sauce thicken and shrimp cook. Serve over rice pilaf. Sprinkle with parsley.
