Shrimp and Rice Salad can be ahead of time.

Ingredients

  • 1 cup rice, cooked
  • 3/4 cup popcorn shrimp, boiled
  • 1 teaspoon salt
  • 1/4 cup green pepper, chopped fine
  • 1 tablespoon lemon juice
  • 2 tablespoons French dressing
  • 1/3 cup mayonaise
  • dash Ketchup
  • dash Tabasco sauce
  • 1 tablespoon ripe olives, chopped
  • 1 tablespoon green onion, chopped

Directions

  1. Combine all ingredients except for shrimp. Refrigerate overnight. Add shrimp before serving.
