Shrimp and Cauliflower Salad is a refreshing treat.

Ingredients

  • 1 cup cold cooked rice
  • 1 cup cooked shrimp, chopped
  • 3/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1/4 cup green pepper, slivered
  • 1 tablespoon minced onion
  • 2 tablespoons stuffed olives, chopped
  • 3/4 cup fresh cauliflower, diced
  • dash of pepper
  • 1/3 cup mayonnaise
  • lettuce cups

Directions

  1. Combine all ingredients in large bowl in order given. Toss gently until well mixed. Serve in lettuce cups.
