Shredded Potato Casserole is a flavorful and easy make ahead side dish.

Ingredients

  • 10 redskin potatoes
  • Sauce: 8 ounces Cheddar cheese, shredded
  • 1 teaspoon dry mustard
  • 1 1/2 teaspoons salt
  • 1 cup milk
  • 1/2 pint whipping cream
  • dash pepper
  • 4 dashes nutmeg
  • 1/2 stick butter, cubed
  • sprinkle paprika

Directions

  1. Boil potatoes until tender. Peel when cooled and shred into a buttered casserole dish. Mix sauce ingredients and pour over potatoes. Dot with butter. Sprinkle with paprika. Cover and refrigerate overnight.
  2. Remove from refrigerator 1 hour before baking. Bake at 325 degrees F for 1 hour.
