Sheepherder Potatoes

Foil baked potato with onion and bacon.


  • 8 bacon slices, minced
  • 2 onions, chopped
  • 4 potatoes, peeled, sliced 1/2 inch thick
  • Salt and pepper


  1. Fry the bacon until cooked but not quite crisp. Stir in the onion, saute until limp. Drain, reserving 2 tablespoon of drippings.
  2. Place a large piece in and over a casserole dish with enough excess to fold over and seal. Arrange the potatoes in the center. Pour the drippings, bacon and onion over. Season with the salt and pepper. Seal the foil, leaving a space between the potatoes and foil
  3. Bake at 300 degrees Fahrenheit for 1 1/2 hours.
