Ingredients

  • 1 1/2 pounds shad roe
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 12 slices bacon

Directions

  1. Thaw roe if frozen.
  2. Drain on absorbent paper towel.
  3. Sprinkle with salt and pepper.
  4. Fry bacon in a skillet until crisp.
  5. Place bacon on a paper towel.
  6. Fry roe in hot bacon fat at moderate heat for 3 to 5 minutes or until brown.
  7. Turn carefully and fry 3 to 5 mintues on the other side.
  8. Drain on a absorbent paper towel.
  9. Serve with bacon.
