This frothy pale green cocktail is made from a blend of absinthe, lemon juice, simple syrup and an egg white.


  • 1 part Absinthe
  • 1/2 part simple syrup
  • 1/2 part lemon juice
  • 1 egg white


  1. Put the Absinthe, simple syrup and lemon juice into a cocktail shaker.
  2. Vigorously shake the mixture for 20 seconds and then add the egg white.
  3. Shake the mixture for an additional 35 seconds and then strain into a cocktail glass filled with ice; serve immediately.
