This frothy pale green cocktail is made from a blend of absinthe, lemon juice, simple syrup and an egg white.
- 1 part Absinthe
- 1/2 part simple syrup
- 1/2 part lemon juice
- 1 egg white
- Put the Absinthe, simple syrup and lemon juice into a cocktail shaker.
- Vigorously shake the mixture for 20 seconds and then add the egg white.
- Shake the mixture for an additional 35 seconds and then strain into a cocktail glass filled with ice; serve immediately.
