Fresh from New Orleans, Scallops Louisiana brings home the fine flavors of the French Quarter.

Ingredients

  • 1/4 cup shortening
  • 1/2 cup green onion, chopped
  • 1 green pepper, cut into 1 inch strips
  • 1 garlic clove, minced
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 cups ketchup
  • 1 cup water
  • 4 tablespoons flour
  • 2 tablespoons dry white wine
  • 1 pound scallops
  • 1/2 pound mushrooms, sliced and cooked

Directions

  1. Melt shortening in a skillet and when slightly brown add onion, green pepper, garlic and celery. Cook about 5 minutes over moderate heat. Add salt and pepper, then add ketchup; mix water and flour until smooth; add to ketchup mixture. Cook until thick; then simmer for 5 minutes. Add wine, scallops and cooked mushrooms, and continue to cook about 10 minutes over low heat.
  2. Serve on top of cooked rice.
