Baked scallop and bacon skewers.

Ingredients

  • 1 pound scallops
  • 3 tablespoons margarine
  • 8 slices bacon, cut into 2-inch pieces
  • Salt and pepper

Directions

  1. Preheat the oven to 475 degrees Fahrenheit.
  2. Cook the scallops in the margarine for 5 minutes.
  3. Alternate the scallops and bacon on skewers. Season with the salt and pepper.
  4. Insert the skewers in unbaked potato halves to stand up. Bake for 20 minutes.
