Scallop Fettuccini

Creamy fettuccini with scallop and pineapple.


  • 1 red pepper, chopped
  • 1/4 cup sliced green onions
  • 2 tablespoons reduced-calorie margarine
  • 2 tablespoons lime juice
  • 2 pounds seas scallops
  • 2 cups cubed fresh pineapple
  • 1 cup Chinese pea pod halves
  • Cooked fettuccini


  1. Heat the pepper, onions, margarine and lime juice on medium until the margarine has melted. Mix in the scallops and heat for 12 minutes, stirring often. Add in the pineapple and pea pods. Continue cooking until heated through.
  2. Remove the mixture from the skillet, keeping the liquid in. While keeping the mixture warm, heat the liquid to a boil until thickened.
  3. Serve the scallop mixture and sauce over the cooked fettuccini.
