Savory Curry Bread Loaf

The addition of curry powder adds an aromatic and spicy twist to this savory bread, while the shredded pear and yogurt keep is considerably moist and tender.


  • 1-1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1-1/2 teaspoons curry powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup shredded pear (about 1 medium)
  • 1 cup plain yogurt
  • 3 tablespoons frozen apple juice concentrate, thawed
  • 1 egg
  • 2 egg whites


  1. Preheat your oven to 350 degrees and grease a loaf pan with cooking spray or olive oil.
  2. Place the flours, curry powder, baking powder, baking soda and salt into a large bowl and mix well to combine. Add the pear, yogurt, apple concentrate, egg and egg whites and continue to stir until the mixture is well-blended.
  3. Transfer the batter to the prepared pan and then place in the oven for 40 minutes or until a toothpick inserted into the middle of the bread tests clean. Let the bread stand for 5 minutes prior to removing from the pan.
