The addition of curry powder adds an aromatic and spicy twist to this savory bread, while the shredded pear and yogurt keep is considerably moist and tender.
Ingredients
- 1-1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1-1/2 teaspoons curry powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup shredded pear (about 1 medium)
- 1 cup plain yogurt
- 3 tablespoons frozen apple juice concentrate, thawed
- 1 egg
- 2 egg whites
Directions
- Preheat your oven to 350 degrees and grease a loaf pan with cooking spray or olive oil.
- Place the flours, curry powder, baking powder, baking soda and salt into a large bowl and mix well to combine. Add the pear, yogurt, apple concentrate, egg and egg whites and continue to stir until the mixture is well-blended.
- Transfer the batter to the prepared pan and then place in the oven for 40 minutes or until a toothpick inserted into the middle of the bread tests clean. Let the bread stand for 5 minutes prior to removing from the pan.
