A gorgeous side dish with intense red color and savory taste, serve these sautéed tomatoes and shallots cooked in dry white wine with grilled fish.
Ingredients
- 6 shallots, quartered
- 3 pints grape tomatoes
- Sea salt and freshly ground black pepper
- 1/2 cup dry white wine
- 2 tablespoons capers
Directions
- Add the tomatoes to the pan and sprinkle with a few pinches of salt and pepper. Sauté the mixture for 3 minutes and then pour in the wine; cook for an additional 4 minutes. Add the capers to the pan, stir to combine and then serve immediately.
