Sautéed Corn with Brown Sage Butter

You will need the corn kernels from at least three husked corn cobs for this ultra simple, yet exceedingly elegant and flavorful side dish recipe.


  • 3 tablespoons butter
  • 6 sprigs fresh sage
  • 1-1/2 cups fresh corn kernels (cut from about 3 ears)
  • Salt and freshly ground black pepper


  1. Place the butter into a large sauté pan over medium heat. Once melted, add the sage and stir to combine. Cook the mixture for 3 minutes, stirring constantly, until the butter browns.
  2. Add the corn to the pan, stir well to coat with the butter and then sauté the mixture for 1 minute. Add a few pinches of salt and pepper to taste and then serve immediately.
