Salsa Fresca tastes even better if made the night before your big fiesta.

Ingredients

  • 12 very ripe Roma tomatoes, chopped into 1/4 inch square pieces
  • 1/2 cup red onion, chopped
  • 1/4 cup garlic, finely chopped
  • juice of one lemon
  • 1/2 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon freshly ground black pepper
  • 1/4 teaspoon cumin
  • 1 jalapeno pepper, finely chopped
  • 1 bunch cilantro, finely chopped
  • 1 teaspoon salt

Directions

  1. Combine all spices in a small bowl. Mix well.
  2. Combine tomato, onion, garlic and cilantro in a large bowl. Add spices and mix well.
  3. Pour lemon juice over tomato mixture. Chill in refrigerator until ready to serve.
