Salmon Loaf with Cucumber Sauce is a definite hit with ladies who lunch!
Ingredients
- 1 pound can salmon, drained and flaked
- 1/2 cup mayonaise
- 1 can cream of celery soup
- 1 egg, beaten
- 1 cup dry bread crumbs
- 1/2 cup onions, chopped
- 1/4 cup green pepper, chopped
- 1 teaspoon lemon juice
- 1 teaspoon salt
- Cucumber Sauce: 1/4 cup mayonaise
- 1/2 cup sour cream
- 1/4 cup cucumber, chopped
Directions
- Mix all ingredients together except sauce ingredients. Pour into a greased 8 by 4 inch loaf pan. Bake at 350 degrees F for 60 minutes.
- Mix sauce ingredients together. Serve salmon loaf with sauce.
