Serve this dish over biscuits or cornbread.

Ingredients

  • 1 pound salmon
  • 1/4 cup chopped onion
  • 1/4 cup melted butter
  • 1/4 cup all purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups milk
  • 1/2 cup peas
  • 1/2 cup carrots

Directions

  1. Drain the liquid from salmon.
  2. Set liquid aside.
  3. Break salmon into large pieces.
  4. In a skillet saute onion in butter until wilted.
  5. Stir in flour, slat and pepper.
  6. Add milk a little at a time.
  7. Stir constantly until mixture is thick.
  8. Add vegetables, salmon and liquid.
  9. Heat.
  10. Serve ovr biscuits or cornbread.
