It is recommended that a rye like Sazerac be used for this sweet and sour cocktail. The fresh egg white gives it just the right amount of frothiness, but also helps smooth out the texture.

Ingredients

  • 1-1/2 ounces rye
  • 3/4 ounce fresh egg white
  • 1/2 ounce fresh lemon juice
  • 2 bar-spoons Bénédictine
  • 1-1/2 bar-spoons sugar syrup
  • 1/2 ounce dark rum
  • Maraschino cherry to garnish

Directions

  1. Place all of the ingredients, except for the rum and cherry, into a cocktail shaker filled with ice.
  2. Vigorously shake the mixture for 35 seconds and then strain into a cocktail glass filled with fresh ice.
  3. Float the rum on the top of the drink and then garnish with a cherry; serve immediately.
