Roasted tomatoes are wonderful as a side dish or as an appetizer, served with Fresh bread, Kalamata olives and cubed feta cheese.


  • 6 medium tomatoes
  • 6 tablespoons of olive oil
  • Sea salt and freshly ground pepper


  1. Cut each tomato in half and place on a baking sheet.
  2. Brush each slice with 1/2 tablespoon olive oil and sprinkle with salt and pepper.
  3. Roast the tomatoes in the oven for 1 hour and 10 minutes.
