Roasted tomatoes are wonderful as a side dish or as an appetizer, served with Fresh bread, Kalamata olives and cubed feta cheese.
- 6 medium tomatoes
- 6 tablespoons of olive oil
- Sea salt and freshly ground pepper
- Cut each tomato in half and place on a baking sheet.
- Brush each slice with 1/2 tablespoon olive oil and sprinkle with salt and pepper.
- Roast the tomatoes in the oven for 1 hour and 10 minutes.
