Talk about comfort food in a sandwich...this Roasted Pork Club Sandwich has it all bacon, avocados and a scallion mayonaise to cry for.
Ingredients
- 8 slices bacon
- 1/2 cup mayonnaise
- 4 scallions (thinly chopped)
- kosher salt and ground pepper
- 12 slices bread (toasted)
- 3/4 pound roasted pork
- 1 avocado (peeled and sliced)
- alfalfa sprouts
- 8 slices swiss cheese
Directions
- Cook bacon and drain on paper towel
- In a small bowl combine mayonnaise, scallions, salt and pepper
- Spread mayonnaise on half the bread and layer those slices with all ingredients
- Cover sandwiches with remaining bread slices
- You may want to secure sandwiches with toothpicks
