Talk about comfort food in a sandwich...this Roasted Pork Club Sandwich has it all bacon, avocados and a scallion mayonaise to cry for.


  • 8 slices bacon
  • 1/2 cup mayonnaise
  • 4 scallions (thinly chopped)
  • kosher salt and ground pepper
  • 12 slices bread (toasted)
  • 3/4 pound roasted pork
  • 1 avocado (peeled and sliced)
  • alfalfa sprouts
  • 8 slices swiss cheese


  1. Cook bacon and drain on paper towel
  2. In a small bowl combine mayonnaise, scallions, salt and pepper
  3. Spread mayonnaise on half the bread and layer those slices with all ingredients
  4. Cover sandwiches with remaining bread slices
  5. You may want to secure sandwiches with toothpicks
