Roasted Garlic Butternut Squash

Not only is butternut squash a great side dish for fall, but it's also easy to make!


  • 2 medium butternut squash, halved lengthwise, seeds removed
  • 4 teaspoons butter
  • 4 teaspoons brown sugar
  • 2 teaspoons garlic
  • Salt and pepper, to taste


  1. Preheat oven to 400 F. Place butternut squash halves on a large baking sheet flesh side up. Place 1 teaspoon butter in the middle of each squash. Sprinkle brown sugar and garlic over each squash. Season with salt and black pepper.
  2. Bake for 25 minutes until flesh is tender. You may want to split each serving in half depending on the size of your squash. Serve warm.
